PUREJO MARSHMALLOWS
High Protein / Sugar-free / Gluten-free / Keto / Fat-free / Low carb and Guilt free!
Due to popular demand I am sharing my Marshmallow recipe! It has taken time to get it just right and super high in protein. The perfect treat after a meal or as a snack to stay within your macros.
As a kid I loved marshmallows and now I can enjoy them sugar and guilt free.
This recipe has approx 380 calories /95g of protein & 3g of carbs (will vary according to the portion powder you use)
INGREDIENTS:
- 300g of free range egg whites
- 5 tbsp ossa organic gelatine
- 2 cups cold water
- 1/3 cup stevia powder (optional adjust according to you tastes – maybe your protein powder is very sweet and needs less or none)
- 1tbsp vanilla essence caramel works nice too)
- 2 scoops of vanilla organic whey protein powder (I use Noway ATP Protein Powder but try the one you have – any issues let me know) ( i have not tried plant based powders so!)
- 1 tbsp Coconut oil / butter for greasing
- unbleached grease-proof paper to fit your bowl / tin
Utensils needed – Tbsp / medium size stainless pan/ hand whisk / Magi-mix or similar high power standalone electric whisk / 1/3 cup / / extra large bowl / spatula / glass Pyrex dish or baking tin – I used glass dish 10 x 7 inches
METHOD
Put 2 cups of cold water in a pan and sprinkle the gelatine over the top
Let it sit for 5 minutes
Then place on the hob and heat until all gelatine has melted. Constantly stirring it with a whisk. Take off the heat. Add the protein powder and stir with a whisk well. Place all the mixture into a bowl and place in the fridge for 5 minutes
In the meantime place the egg whites in the bowl of a magi-mix and whisk on high for 3 minutes or so until stiff peaks
Add the stevia and vanilla essence and whisk on low for 20 seconds
Then transfer this mix to another clean bowl and place the cooled gelatine mix from the fridge in the magi-mix bowl (no need to wash it) and whisk for 2 minutes on high. Add the egg whites and whisk again for 30 seconds until well combined and shiny.
I like to use a spatula to move the mixture from the sides as it is running to ensure a good mix
Then in a large glass bowl grease the inside with a bit of coconut oil or butter then line it with unbleached grease proof paper. I find the paper then stays in place nicely with the oil under it!
Poor the marshmallow mix in and smooth over the top
Pop in the fridge until set – over night or 3/4 hours
Then lift the paper and marshmallow out. Place on a board. Peel away the paper and cut marshmallows as you desire.
Keep for 6-7 days in an air-tight glass container in the fridge
